- 2 bundles of fresh beets with stems and greens (only use the stem and greens)
- 1 Tbsp olive oil
- dash salt
- ½ tsp pepper
- 1 tbsp apple cider vinegar
- Remove the stem and beet greens from the beet (save the beet bulb for another dinner)
- Steam in a large pot for 15 minutes or until the beet greens and stems are tender.
- Remove from pot and place in a medium sized bowl and toss with olive oil, salt, pepper and apple cider vinegar.
- Serve and enjoy! Serves 6.
