Ingredients:
1 Cup Wild Rice
1 Tsp Avocado Oil
½ Yellow Onion (chopped)
1 lb Ground Beef
2 Tbsps. Taco Seasoning
1 Cup Salsa
4 Bell Peppers
Directions:
- Cook wild rice according to package directions
- Preheat oven to 400F and line baking sheet with parchment paper
- Heat oil on a pan and add onions. Sautee for 2-3 minutes or until they have softened. Add in the ground beef and break up as it begins to cook.
- Mix in taco seasoning, cook for 7 to 8 minutes or until cooked through
- Turn off the heat and mix in cooked wild rise and salsa until well combined
- Cut bell peppers in half long ways and remove seeds
- Divide the ground beef mixture into the bell peppers and put in the oven for 20-25 minutes and enjoy!
