Beef & Wild Rice Stuffed Bell Peppers

This Baked to perfection, these stuffed peppers offer a balance of protein, fiber, and healthy fats, making them a great option for a wholesome dinner. Easy to prepare and packed with flavor, perfect for meal prep or family meal! Enjoy a delicious twist on a classic meal!

Ingredients:

1 Cup Wild Rice

1 Tsp Avocado Oil

½ Yellow Onion (chopped)

1 lb Ground Beef

2 Tbsps. Taco Seasoning

1 Cup Salsa

4 Bell Peppers

Directions:

  1. Cook wild rice according to package directions
  2. Preheat oven to 400F and line baking sheet with parchment paper
  3. Heat oil on a pan and add onions. Sautee for 2-3 minutes or until they have softened. Add in the ground beef and break up as it begins to cook.
  4. Mix in taco seasoning, cook for 7 to 8 minutes or until cooked through
  5. Turn off the heat and mix in cooked wild rise and salsa until well combined
  6. Cut bell peppers in half long ways and remove seeds
  7. Divide the ground beef mixture into the bell peppers and put in the oven for 20-25 minutes and enjoy!
